For a pre-3e feel I'd recommend no multi-classing, no feats, 1 week long rests, and possibly race & class restrictions to taste. Those are well within the standard 5e frame. There are some other things about 5e some old schoolers dislike, notably at-will attack cantrips, that can't easily be removed without altering the balance of play.
